Flor de Guia is a soft to semi-hard cheese made with milk from local, free-range pastured breeds of sheep, cows and goats. The main characteristic of Flor de Guía is that the milk is curdled using vegetable rennet made from the dried flower heads of the Canarian cardoon. It has Denomination of Origin protection.
