“Frixuelos” (also known as “fayuelos” in the Asturian dialect of Bable) are a traditional dessert from Asturias, Leon, and Cantabria made from flour, milk, and eggs. To make this dish, flour, eggs, and salt are beaten in a bowl while slowly adding the milk (alternatively, the flour can be added to the milk until the mixture is neither too thin nor too thick). The mixture is beaten until all the ingredients have been thoroughly blended and there are no lumps left. Then butter or lard is melted in a frying pan (or some olive oil is heated). When it is hot, some of the batter is added: just enough for it to cover the surface of the pan. It is cooked until set and golden brown.
