Until the appearance of Nigiri-zushi (sushi shaped by hand) in around 1820, Oshi-zushi (pressed sushi) was popular as it could be preserved. It is still remains as an Ekiben (boxed lunch sold in train stations) that the area boasts. From left to right, Masu-zushi in Toyama, Oshi-zushi topped with aji in Kamakura, Kanagawa Prefecture, and Kakinoha-zushi in Nara.
