Garnished coconut rice can be eaten with fried plantains, peppered fish, turkey and boiled eggs. Coconut rice comes next to jollof rice and fried rice in Nigeria. To prepare, one big coconut would be enough for 4 cups of rice which should serve five to six people. Coconut rice can be made plain or garnished. The ingredients for garnished coconut rice include coconut, rice, tomatoes, chicken/beef/boiled eggs/sausage, vegetables, onions, stock cubes, seasoning, cooking oil, salt and pepper.
