Molokhia is a soup made from green mallow leaves. The leaves are finely chopped with a Makhrata - a knife with double handles and a circular blade. Molokhia is loved so much it is dried and frozen and consumed year round. The soup is made with meat broth, but also seafood and sprouted bean broth depending on the region.
