Harvesting dates

Preparing to harvest the dates to make agwa.

Agwa is a date paste made form Siwi date variety. The siwi dates are dried, then pressed and stored for the entire year. Agwa is used in cooking, especially preferred in foods like kahk (cookies), sesame breads, and feteer (a think layered pastry with ghee).
