Gassan bamboo shoots are a type of alpine bamboo shoot harvested on Mt. Gassan. For the best flavour, the bamboo shoot is harvested on Mt. Gassan before the snow starts to melt. Locals enjoy eating grilled Gassan Bamboo shoots and Takenoko-jiru, miso soup with bamboo shoots and deep-fried tofu in Sping. It has the best crunchy texture and rich flavour. It is also used in Shojin Ryori of the Three Mountains of Dewa.
The Bamboo shoot can be preserved by boiling them in glass jars and kept for a year.
