In this 2021 project, the Nusa Indonesian Gastronomy Foundation collaborated with American chefs living in Indonesia, Indonesian chefs living in the United States, as well as national and local organizations across the archipelago, to investigate, preserve, and promote indigenous culinary traditions to an international audience. Support for this project came from the AFCP 20th Anniversary Partnership Program, a State Department special initiative.
