Fruit of this are alliances such as the farmer Santiago Pérez, from the "Finca de los Cuervos" and the chef Javier Olleros, from "Culler de Pau", with a Michelin star in O Grove (Pontevedra). From mutual respect and admiration, both parties promote research, the recovery of almost extinct species due to their low commercial value, they seek excellence even in the humblest products and claim nature on the plate.
