Although jollof rice can be prepared in varied ways, the basic Nigerian jollof rice includes parboiled rice, tomatoes and tomato paste, pepper, vegetable oil, onions, and stock cubes. Although ingredients are added asynchronously, all the ingredients are cooked in one pot. First, oil is added into a pot on a lit burner, chopped onions are added, blended tomato with pepper and onions are added to form the base. Parboiled rice is then added with a little water or meat/chicken broth. The jollof rice is very often served with fried plantains, moimoi, coleslaw or salad, and a protein of choice.
