Kagami mochi is a traditional Japanese New Years decoration. It consists of two round mochi cakes, the smaller placed on top of the larger, with a daidai (Japanese bitter orange) on top of the mochi. However, when it was time to eat the mochi, it was often hard to prepare and sometimes had gone moldy. To fix these problems, modern mochi companies started to look for different ways to produce this cultural staple so that it could continue.
