Sake is poured into the hollow of young bamboo and is warmed up over a hearth built into the floor or on a bonfire. The name, “kappo-zake” comes from the sound perceived by Japanese people when pouring sake (or “zake”): kappo kappo. The type of alcohol used differs based on the area, with some places using sake and some using shochu, a type of distilled alcohol.
