Winter is the time of year when the sake is ready to be pressed, bottled, and sold. During the pressing process, the clear sake is separated from the sake lees ("sake kasu"). The people of Niigata take that byproduct to make "kasu jiru." This delicious and warm soup helps the people of snow country get through the cold winters.
