Kneading the mangaouna dough
Mangaouna is an Easter pastry found in Port Said. Although its origins stem for the recipe of the Europeans living in Port Said during the development of the Suez Canal, people still make it every Easter. Easter in Port Said coincided with the ousting of Allenby, and until today people remember the resistance to outside forces. The festivities today still focus and expose societal issues, eating mangaouna, burning effigies and playing semsemeya music.
