DINNER AT THE SAVOY
This menu, from a dinner at the Savoy Hotel, was brought home by Wilhelmina von Hallwyl and kept for posterity. It dates from 27 November 1900. On this day guests were treated to:
Consommé paysanne
Filet de Mostelle aux fines herbes
Pommes natures
Contre-filet garni à l'anglaise
Mousse de fois gras à la Royale
Volaille rôtie à la brôche
Salade
Aubergines frites au gratin
Bavarois à la vanille
Patisserie
Dessert
That is: Peasant-county style consommé, herbed fillet of forkbeard (a type of fish), boiled potatoes, sirloin steak à l'anglaise, foie gras mousse à la Royale, spit-roasted chicken, salad, fried aubergine gratin, Bavarian cream with vanilla, pastries, dessert.
