The Cuomo Mill machinery was purchased on November 18, 1901 by the Ganz company of Budapest, as demonstrated by the purchase invoice.
1. The CRUSHER is the machinery that breaks and re-grinds the grains of wheat. The crushers present in the Cuomo pasta factory were of type A. The same ones had divided automatic hoppers and automatic alarm devices to warn when the introduction of grain into the bins ceased. The crushers were the machines that ground the grain thanks to very hard cast iron cylinders, a process that in ancient times was performed by crushing the grain with stone millstones, in the case of Pastificio Cuomo the grain received gradual breakages which preserved its quality.
2. The TARARA ZIG-ZAG was a very particular device and was the last to intervene to ensure complete cleaning of the grain. In fact, this itself separated the light parts and the empty seeds by means of a calibrator, eliminating all the foreign bodies present in the grain, both those of higher and lower calibration than the grain of wheat. Finally, it contained a magnetic separator to retain any metal bodies coming from the harvest or from the previous cleaning machines. The same was equipped with a suction apparatus which extracted the lightest impurities from the grain through a zigzag path under the control of a worker who eventually manually removed further impurities. Pastificio Cuomo's was a type 2 model.
3. GRAIN BRUSHING MACHINE was used for better grain cleaning. At one time it was used not only after the cleaner but also after the grain washer. It consisted of a compact cylindrical brush and a mantle with small holes which were used to carry out an initial cleaning, leaving out the first impurities of the beans. Pastificio Cuomo's was a Eureka model."
