Panellets (All Saints Sweets) are traditional cakes in Catalan, Valencian, and Balearic cuisine. They are generally eaten during the festival of Castanyada, or All Saints’ Day (November 1). Panellets are made from sugar, ground almonds, egg, and lemon rind. The dough is rolled into small balls, and then covered with pine nuts. These are the traditional panellets, but nowadays they come in all sorts of varieties by adding different ingredients such as chocolate, coffee, pistachio, orange, quince, or coconut.
