Pap (or Ogi) is a popular Nigerian meal that can be made from made from maize, sorghum, or millet. It is usually taken at breakfast but can be had at any time of the day. With maize, it is made from soaking and blending raw corn. Customarily, the grains are soaked in water until they are soft enough for wet grinding. The ground mixture is then sieved to remove the chaff and afterwards left to ferment for about 2 to 3 days until it is sour.
