San Simón da Costa cheese is a smoked, Spanish cows’ milk cheese. It is produced in the Terra Chá region of Lugo (Galicia). It is made with either raw or pasteurized cows’ milk from the Rubia Gallega, Braunvieh, and Holstein Friesian bovine breeds, or with cross-breeds of the three.
