Snow-aged carrots are a specialty of "snow country" Niigata. While carrots are usually harvested in autumn, snow-aged carrots are kept in the ground to be covered by snow through the winter. They are harvested from under the snow in the spring between February and April. By aging the carrots under the snow, their natural sweetness is magnified and the taste becomes more well-rounded.
