Warabi (Bracken) is gathered in spring and preserved in salt so that it can be enjoyed all year round. The preserved Warabi is soaked in water and rinsed many times to remove the excess salt. It is used as an ingredient for stir fry or for simmered dishes and is also served in the Shojin Ryori. It is a great example of preserved food in Tsuruoka.
