Put the rice on iron rack with wheat bran beneath, separate water and vapor which will go into the cooling pool and become wine later including fore-run, middle-run and after-run. The middle part is 55 degrees rice wine, which should be put for one year before drinking. The other two parts will be distilled again with next squeezed wine(3).
