Candies, lokum and desserts are integral parts, the crown jewels of our culture and cuisine. Although lokum has been known in Anatolia since the 15th century, it became widespread in the Ottoman Empire, especially in the 17th century. In Europe, it started to be known as “Turkish Delight” in the 18th century, thanks to a British traveler. Lokum, which was previously made with a combination of honey or molasses and flour, changed both its recipe and taste thanks to the introduction of refined sugar, known as “head sugar”, and especially starch in the 17th century. In a few posts, we will share with you items from our storage box collection, belonging to our candy culture. Under the crescent & star part of this enormous tin lokum box with the visuals of Istanbul Hagia Sophia Mosque, city walls and the sea, the following is written in Ottoman Turkish: “Rahat Lokum Horen İstanbul”.
