Although he grew up in the kitchen, Mario, the youngest of the Sandoval brothers, trained at the School of Hospitality of Madrid and made stays as stagier in different restaurants in Spain -Jockey, Bulli, Arzak ...- and France -Bocuse, Bras ... Since 1999 he has been in charge of the culinary management of Coque, for which he received the National Gastronomy Prize in 2013.
