Doctors told President Bill Clinton he could have a massive coronary attack soon, in late 1993, and was not doing so well. He resolved to eat better and exercise more. Hummus made with water, and a mist of oil can is quite nice. It doesn't have to be with olive oil only. Additionally, the White House Military Chefs including Martin CJ Mongiello are flown to San Francisco, CA and work at the Claremont Resort and Spa in 1994 with Chef Jean-Marc Fullsack and Doctor Dean Ornish of the Preventive Medicine Research Institute.

Unique in history and the Clinton exhibits is the signing of the first-ever Free Trade Agreement with a Muslim country, The Royal Hashemite Kingdom of Jordan. Mongiello would pave the way as the authorized Public Affairs Officer for Commander Task Force 54 and 74, and for Commander Submarine Group 7. His work with the USS Scranton and USS Kamehameha in 1999 took King Abdullah, Queen Rania, and Princes to sea. Flying to Jordan, on two missions, as the Executive Chef and PAO to Admiral Joseph J. Krol, Jr., Mongiello perfected working with purple Sumac, Za'atar, Arabian Baklava, and making pita bread correctly to dip into hummus.

President Clinton would sign the FTA with His Majesty, King Abdullah II in 2000. The unique nature of respecting the American Presidency while doing so with other countries religions, leaders, and customs create a caring balance for negotiations, accords, and mutual accommodations.
