RICE MILLING or polishing → to prepare for brewing good sake, the rice are being polished or milled. This is not as simple as it might sound, it must be done gently so as to not generate too much heat (it affects water absorption) or not crack the rice kernels (not good for the fermentation process if cracks). ＊The amount of milling greatly influence the taste＊
