Softening tasty red onions for the President and First Family's chili is easily done in a heavy bottomed pan. Onions often release a tremendous amount of water so it's not necessary to use oil or butter. Chef Marti often sautee's with water or miso broth.

Originally featured in the best-seller, Everyday Cooking with Dr. Dean Ornish, the ingredients list has expanded since 1995 for making "Arkansas Chili." This is one of the more famous vegetarian recipes created by Executive Chef Marti Mongiello for Bill, Hillary, and Chelsea Clinton. These techniques were taught by Chef Jean-Marc Fullsack at the Preventive Medicine Research Institute (PMRI).
