Sturgeon

It is a semi-oily fish, found in both fresh and salt water. Caviar (or sturgeon roe) comes from this fish. Sturgeons are caught in nets and bred in nurseries. Once they reach fertile age, they are artificially inseminated, and their eggs later extracted.
