The Hernández brothers (Venancio and Federico) have brought their offal store to the market, with liver, tongue, pigs’ trotters, cheeks, and meat (mainly rosé veal). Their specialty (meat from León—make sure you check it out) is from the Valles de Esla, with whom they have an exclusive contract, although they are also supplied by Muñoguiño de Ávila with their excellent suckling lamb. And, in their words, “the beef is purebred and free range,” guaranteeing its flavor when it arrives at your table!

A feature of Madrid’s Chamberí neighborhood since 1933, the Vallehermoso Market’s raison d’etre is the same as when it first opened its doors to the public: selling quality products. However, today it does so under a new business model in which customers can not only shop there, but also go out for tapas, lunch, or dinner at one of its many catering outlets.
