Bekhero means - with all its goodness, as it is a full fat cheese. Bekhero cheese - fresh ricotta type cheese - is being drained from the whey using a hasira. The hasira is made from reeds and gives fresh cheese its distinct shape. Bekhero cheese is made with animal rennet (manfaha) that women collect from a young calf stomach. The cheese is eaten fresh, or can also be stored in a large clay pot and turns into a delicious creamy gebna adima.
