Yemas de San Leandro (San Leandro egg-yolk pastries) are convent-made pastries, made by the cloistered eremitic Augustine nuns of the Convent of San Leandro in Seville. They are made following a very old recipe, using egg yolk and sugar. A handwritten letter from the 16th century, extolling their deliciousness, provides evidence that they were already in existence from at least that time. The pastries are conical in shape, and sold wrapped in paper, placed in small wooden boxes with a seal and a label.
