The personal cook of King Maximilian II of Bavaria published a cookery book which served to include various European influences – he had worked in Malta, Greece, Sicily and Paris – in courtly culinary culture. Its art of cooking is based on haute cuisine, also reflected in the use of French terms. Turbot prepared in the English manner is hence naturally referred to as Turbot à l’Anglaise.
