The Ibero-American Academy of Gastronomy was established on September 21, 2009, during a solemn ceremony held at the headquarters of the Real Maestranza de Caballería in Seville.

The Academy aims to promote "the research, dissemination, and protection of the cuisines and gastronomic activities characteristic of the different Ibero-American regions and peoples, as well as to safeguard the purity of their traditions, support their modernization, and drive comprehensive actions in international cooperation and solidarity."

Currently, it is composed of 17 National Academies of Gastronomy from various Ibero-American countries: Argentina, Bolivia, Brazil, Chile, Colombia, Cuba, Ecuador, Spain, United States (East), Mexico, Panama, Paraguay, Peru, Portugal, Puerto Rico, Dominican Republic, and Venezuela.
