An Indo-Chic Experience in DIFC, Dubai

Bombay Borough is an all-day Indian bar and eatery located in DIFC, Dubai. Spread across two floors with an open-air dining area and a private section, the restaurant showcases an Indo-chic experience that blends Western touches into a colonial-era setting.

The Vision Behind Bombay Borough

Owned by Charcoal Concepts, Bombay Borough is the off-shoot of an award-winning restaurant in India. The idea was conceived by Mrs Shikha Nath, whose fascination for food was revealed at a young age.

As her family explored India by train, her interest lay in the variety of food on the streets or at the railway canteens.

A Culinary Legacy from Home

Mrs Shikha Nath grasped many of the traditional cooking recipes and techniques while still young, when her mother went about creating different spice mixes and cooked food fresh off the stove.

Through Bombay Borough, she wanted to present to the world all the secret recipes from her mother’s kitchen.

Inspired Flavors and Unique Masalas

She experimented with flavours and created her own blend of masalas. During a holiday in Jaipur, it dawned on her that the rajputs (royals) used to roast game meat on an open campfire with just some spices rubbed over it.

This inspired the ‘Rajputana Murg Soola Kabab’ using a spice mix that she called ‘Shikaar Masala’ (the game mix).

Ensuring Authenticity with Rare Ingredients

Bombay Borough has its ways of ensuring authenticity. Rare ingredients that are not easily available globally are picked up at source – for instance, ‘Bhoot Jolokia’ comes from the North East, ‘Aam Papad’ from the Himalayas, some ‘Podi Masalas’ from the South and so on.

A Diverse Menu Showcasing Exotic India

From a deeply smoked Jodhpur mutton curry to a traditional Goan ambotik and rice served on a traditional banana leaf, exotic India turns up on the eclectic menu of Bombay Borough, served with beverages just as intriguing.

The serving staff make easy work of navigating the menu as they are on familiar grounds.

Culinary Exploration for Guests

Not surprising, as Mrs Shikha Nath has travelled across India with her team of chefs to offer them a first-hand experience of its flavours.

 She considers guests at Bombay Borough as armchair travellers, who set out on a culinary exploration of India through the various flavours brought together on the menu. Just as she did.
