The Vision Behind Bombay Borough
Owned by Charcoal Concepts, Bombay Borough is the off-shoot of an award-winning restaurant in India. The idea was conceived by Mrs Shikha Nath, whose fascination for food was revealed at a young age.

A Culinary Legacy from Home
Mrs Shikha Nath grasped many of the traditional cooking recipes and techniques while still young, when her mother went about creating different spice mixes and cooked food fresh off the stove.
Through Bombay Borough, she wanted to present to the world all the secret recipes from her mother’s kitchen.

Inspired Flavors and Unique Masalas
She experimented with flavours and created her own blend of masalas. During a holiday in Jaipur, it dawned on her that the rajputs (royals) used to roast game meat on an open campfire with just some spices rubbed over it.
This inspired the ‘Rajputana Murg Soola Kabab’ using a spice mix that she called ‘Shikaar Masala’ (the game mix).

Ensuring Authenticity with Rare Ingredients
Bombay Borough has its ways of ensuring authenticity. Rare ingredients that are not easily available globally are picked up at source – for instance, ‘Bhoot Jolokia’ comes from the North East, ‘Aam Papad’ from the Himalayas, some ‘Podi Masalas’ from the South and so on.
