A fish that inhabits tropical and temperate areas around the world and is widely eaten. Aji includes about 50 varieties of fish, including the Atlantic horse mackerel, horse mackerel, etc. Most of the aji caught in Japan are Japanese horse mackerel. These are characterized by sharp, hard scales known as seigo. It contains a large amount of the umami compound inosinate.
