Olives are harvested between December and January. Traditionally, the transformation of olives was done in wine-presses. In older systems, the presses were moved by animal traction, and also using hydraulic energy. In this case, the mills were located next to water courses. In the 1970s, the old milling systems tended to be replaced by mechanical devices using hydraulic presses (FAUVRELLE, 2003: 217-219).
