Ginger has its origin in India. There are two kinds of edible root from ginger plants: Shinshoga and hineshoga. Shinshoga derives from seed ginger. Hineshoga is seed ginger itself that is over two-years old. It imparts umami while it has a characteristic spiciness and refreshing aroma. It is a versatile vegetable, for example it is used as spice. It takes the odor from meat or fish, and it is used in simmered dishes and stir-fries.
