Every Saturday afternoon and Monday morning, the vendors at Mercato Storico Albinelli in Modena donate their unsold produce to the Refettorio Ghirlandina allowing guests to be served in-season fruit and vegetables. Last year, Chef Rino Duca from Il Grano di Pepe used the recovered overripe fruit to prepare a delicious 'Wannabe Tarte Tatin' - a real treat for the guests and a creative way to avoid wasting food.
