During the winter of 1991-1992, Ferran Adrià was able to create dishes without the obligation of daily service. Later, with the new kitchen already built, the development game was created: Ferran, Albert and his closest team, in parallel to the service and taking advantage of some free afternoons, created and carried out tests that were then meticulously recorded in the creativity notebooks .
