Historically, the Volga area that stretches across the lower and the middle part of that great river's course, has given rise to famous food brands like sturgeon and hot mustard. 

The cuisine of Kazan, Samara and Nizhny Novgorod is not simply about local delights, but also such foods as caviar, belyash pies, and roach that are part and parcel of the Russian cuisine on the whole.

Top reasons to visit the region: Baskunchak

Russia has been producing salt on an industrial scale at the salty Baskunchak Lake since the times of Peter the Great when it was the only preserving agent and a currency not unlike today's oil.

Then, salt was shipped upstream to central regions through the city of Astrakhan. Covering 80 percent of Russia's salt production, Baskunchak hasn't lost any significance since.

What's even more important, there are the stunning views of salt deposits straddled by the railroad and local spas that may not be too sophisticated but provide no less benefits to health than those in the Dead Sea.

Nizhny Novgorod, the capital of the Volga Federal Region, is today one of Russia's largest industrial cities. Once the site of a vibrant fair, it was located at the intersection of major trade routes and was home to many crafts.

The region's most acclaimed printed pryanik is still made near Novogrod in the old city of Gorodets that was built in the 12th century to protect the Principality of Vladimir against the Volga Bulgars and remembers the past 800 years of the country's history.

Zhiguli

To most Russians, zhiguli is either a Soviet car or a beer brand. Both, however, were named after the local picturesque Zhiguli Mountains on the right bank of the Volga, a short trip from Samara. 

The mountains are part of the Samarskaya Luka National Park.

Samarskaya Luka National Park offers numerous tourist routes with many historical sites that evoke the ancient kingdom of Volga Bulgaria and legendary Russians from Stepan Razin the rebel to Ilya Repin, the famous painter. Repin's house is located in the Zhiguli village of Shiryayevo and is now a museum.

The cars still travel the Russian roads, while the beer got an updated design and is sold all over the country. Still, the best of the best is to be found in Samara at the iconic Na Dnie beer pub located right at the Zhiguli Beer Factory.

The city's chief beverage is supplied here directly from the factory, founded in the late 19th century by industrialist Alfred von Vacano. The Venskoye (Vienna) beer style he brewed here was renamed as Zhiguli in the 1930s quickly becoming popular across the country.

Astrakhan, historically one of the region's most important cities, has had a huge impact on Russia's food basket. It is, after all, the birthplace of the world's best known Russian brands such as a plethora of sturgeon subspecies and their caviar.

Instead of fresh catches, there is a wide range of smoked, cured and salted fish from metre-long sterlet with its predatory heads to bigheaded carp that simply exudes fat, in addition to catfish, common carp and, of course, sturgeon.

Granular sturgeon caviar is sold in jars and is rather expensive. The cheaper option is pike caviar, but there are many other varieties worth a try. The most respected local treats are cured roach and the lightly salted, fat and tender herring.

The fish is named zalom or "broken fish", because it didn't fit in the barrel when salted and had to be broken in half.

It is hard to overestimate the impact of Tatar culture on the region and the country, with Kazan, the capital of Tatarstan, being an important tourist destination.

At the end of August, a Festival of New Tatar culture is held here. There are numerous food courts that serve international and local dishes for people to relish right on the streets.

Arzamas Goose Festival

Food lovers hold this festival each year in Arzamas, a city near Nizhny Novgorod. The name comes from a local breed of geese that was known from the 17th century but has become extinct. 

The festival explores modern rather than historical recipes. One of the key items on the agenda is the cooking area where the best chefs from Nizhny Novgorod and other cities hold cooking workshops.
