In Puebla, since the 16th century, lodging and restaurants—in Latin restaurare, recovering, regaining strength with soups and broths—have been very important activities, serving as the axis of the processes of development, growth and definition of the city.

In Puebla, hotel restaurants were initially seen as tourist-only places. Fortunately, little by little they have gained an important place in the city, as their chefs and elders—with a menu of international dishes and traditional Puebla food—have given identity and prestige to our gastronomy.
Hotel de las Diligencias
Casa de las Diligencias since 1828, a place for travelers to rest and to move and to stable stagecoach horses. In the photo, the dining room located on the upper floor and where the Hotel Guardiola sign appears, there are diners, the service staff and the table with food and drinks.
The character on the right side of the woman will also appear in the following two photographs, probably Antonio Freyra the owner of the hotel.

The Hotel de las Diligencias, Echeverría 18, was announced as the "oldest, most central and best organized establishment, it offers to the gentlemen passengers, both in the rooms and in the Restaurant, as much as they could want." It should be noted that in the first five photographs of this presentation, the service personnel appear next to the diners.

Also, since forever, the city has provided travelers with a network of shelter, services and food. Spanish, French and Italian—whether they were owners or administrators—aware of the potential that Puebla offered to travelers, made hospitality and restaurants a great enterprise.

Editors such as Mendizabal, Carrasco, Caballero, Toussaint and Nieto—from 1887 to 1950—understood that they could provide necessary information on how much travelers and businessmen may need, whether in publications such as Calendars, Almanacs, Phonebooks and Travel Guides, in which they provided a broad overview of the services pledged by hotels, guest houses, restaurants, taverns and cafes of the city.

The Hotel del Jardín was opened in 1891, Infantes 22. In 1896, Evaristo Enríquez announces the hotel as "the cleanest and tidiest hotel in the whole of the Republic. Elevator, telephone and electric light. Rooms from only $1. With food from $2. Several languages spoken."
For 1902, the Hotel del Jardin has the French owners Capadercy and Perret. In 1920, the Italian Giuseppe Brachetti rents it and announces it as a "First-rate restaurant. Excellent à la carte or Table d'hote service".

The photographers were also great promoters of hospitality and restaurants, most of them hired by Photo Agencies, who commissioned photographs of the architecture of buildings and their interiors.

The Gran Hotel since 1903, Cholula 5. The building was made on an ad hoc basis to serve as a hotel. A commentator points out that, "The Gran Hotel was the favorite for chic people, travel agents and business people. Nice Porfiriato-style construction, with an entrance of carved wooden doors."

The lobby of the Gran Hotel was refurbished to serve as a restaurant. The photograph dated May 6 -936 shows a banquet with 73 diners. The first passenger bus service on the Mexico-Puebla route is located at this hotel.

Owner Jesús de Mendieta. 2 Oriente 11. Telephone: Mexicana 1–53. Ericsson 20-29”.

Portal Hidalgo 10. Also, their prices do not allow competition and because it is so clean and well-organized, it is the preferred choice for all tourists and the good people of Puebla. Unmistakable".

"The most beautiful in the city of Puebla, Mexico, with every luxury and modern comfort, it has an excellent restaurant service. Come and see for yourself," was how the hotel was promoted. It was the favorite restaurant of the people from Puebla because of its location on the Portal. You could have a beer here in the middle of the day or a coffee in the afternoon.
