“We as chefs have greater responsibilities than before: we are asked to get out of our kitchen and listen to our communities. When I invited my friends to join and cook at Refettorio Ambrosiano, as well as Refettorio Gastromotiva in Rio de Janeiro, I was launching a call. The answer was enthusiastic: they came all the way from their countries leaving their restaurants and their recipes behind, but taking their experience and knowledge with them to share with volunteers and guests.” - Massimo Bottura.
And it didn’t stop there. Local and international chefs continue to support our Refettorios by volunteering in their kitchen on a regular basis. When two unique points of view meet, surprising innovations unfold. This is exactly what happens when the resident chefs of the Refettorios welcome guest chefs into their kitchen to work together. It doesn’t matter what backgrounds or culture they come from, it’s by joining forces that they are able to create something incredible.
