Family tradition for children and grown ups
In La Pancita, they prepare this dish with guajillo chili and beef stomach. Various types of meat can be ordered, from a selection of callo (tripe) and panza (belly). It is accompanied with onion, oregano and chile de árbol (tree chili) and is commonly eaten for breakfast.

Not everything is pancita (tripe)
In the restaurant you can find other dishes for people who don't like a dish of pancita, including green enchiladas, browned tacos, quesadillas, sopes (fried tortillas), gorditas (pancakes), huaraches (corn dough and beans), green or red chilaquiles (tortilla chips) and gordintas norteñas (northern pancakes).
