Born in 1976 in La Plata, the capital of the province of Buenos Aires, Mauro Colagreco is now part of the Olympus of culinary excellence. In June 2019, his restaurant Mirazur on the French Riviera took the top spot in the list of the World's 50 Best Restaurants.

His style is a fusion of his Italian-Argentine heritage, his French academic training, a passionate vision of the product, and sustainability. His unconventional vision of haute cuisine combines technical excellence with traditional popular flavors.

After completing his training and starting his career in Argentina, at the dawn of the 21st century, Colagreco traveled to France where he trained under the likes of Bernard Loiseau, Alain Passard and Alain Ducasse. In 2006 he decided to embark on his own adventure and opened Mirazur.

Within a year of its opening, Mirazur received its first Michelin star and soon became a worldwide reference in fine dining, with a philosophy that focuses strongly on products from the sea, the mountains and the restaurant's own gardens.

Here Colagreco grows vegetables from Europe and Latin America and various ancient and threatened species, Practicing sustainable, seasonal agriculture that defines the identity of each menu.

Located in the coastal town of Menton on the French-Italian border, Mirazur currently has three Michelin stars.  The entire menu is inspired by the relationship between the sky and the Earth, and the influence of the moon and the planets on plants.

Three or four times a year, Mauro returns to his native Argentina to go back to his roots and visit his two favorite places in the country: the Calchaquí Valleys and Andean Patagonia.
