TASTINGS AND "TEQUILERO MASTERS"
To maintain and improve the profiles of the tequilas it is important to carry out what is known as pairing, which is the art of mixing tequilas of different ages within the same class to achieve the best aromas and flavors of each batch.
La innovación es parte fundamental de José Cuervo, por lo que se han desarrollado procesos, que dentro de la norma, permiten la implantación de normas y políticas control de calidad que no tienen todas las tequileras, salvo unas cuantas.
TASTING
Sensory analysis or also called "tasting" is one of the most interesting processes for the release of the tequilas. It is carried out through the enthusiastic participation of a team of evaluators, also called tasting panelists or " Maestros Tequileros" (Tequilero Masters)
The tasting results are subjected to a statistical analysis: depending on the number of tasters or participants, the analysis is carried out to generate a decision to accept or reject the evaluated Tequila.
Tasting is an art and science; It is art because it makes the senses manifest by exploring exquisite aromas and flavors, it is science, because the chemical composition establishes the sensory profile of Tequila. The integration of both is what distinguishes the quality of a Tequila.
