Tsutaya

At Tsutaya, Ise Udon's sauce has been made the same way since 1945. The sauce is made by simmering three kinds of niboshi, two kinds of dried bonito flakes, kelp, and other luxurious  ingredients in a wood-fired oven for five hours to create a complex and deep flavor.

"Ise Egg Udon" is made by dipping hot noodles in sauce and mixing them with raw eggs. In the mouth, all of the flavors blend perfectly. You should also try the restaurant's specialty, "Ise Udon with Grilled Pork."
